Cast and Carve is underway! Guests arrived at the lodge on Tuesday for the first week of Cast and Carve magic. And as if you weren’t jealous enough that these guests are heli skiing corn snow in the morning and heli fishing for King salmon in the afternoon, we thought we would let you take a little peek at the Cast and Carve gourmet dining menu. Tordrillo Mountain Lodge boasts a world-class private chef who prepares your meals using seasonal herbs and vegetables from the garden paired with regional seafood and game dishes.

Some of the delectable dishes on this season’s Cast and Carve menu include:

-Pan seared pheasant with morels, madeira, fiddleheads and sweet potato puree

-Grilled elk chop with cabernet mustard and honey glaze, roasted root vegetables

-Alaskan halibut wrapped in potato, oven roasted baby tomatoes, basil pesto beurre blanc

-Halibut ceviche with jalapenos and corn tortilla

-Alaskan spot prawns with siracha cocktail sauce

-Kachemak Bay oysters on the half shell with red wine mignonette and horseradish

-Prosciutto wrapped true cod, truffle whipped potatoes, melted leeks and sage butter
