Our amazing Chef Brendan
If you haven’t had the joy of coming up to visit us at TML, you haven’t had the epic tastebud adventure that only our Chef Brendan can offer.
Alaska is one of the most beautiful places in the world. We’ve got one of the most awe-inspiring landscapes on the planet and we get to enjoy the pristine benefits of Mother Nature on a daily basis. We have beautiful weather, incredible fishing, amazing skiing and great people.
One of those great people is Chef Brendan – our chef. This year is Chef Brendan’s sixth year at TML, and he still treats every meal like a unique culinary masterpiece.
Before Alaska, Chef Brendan spent his days teaching at the New England Culinary Institute. He ran a restaurant with the help of students to help them with their cooking skills. He changed the menu every week to keep them on their toes.
Chef Brendan is originally from Massachusetts and his favorite dish to cook is Duck Confit.
Brendan, however, is more than just the lodge chef. Sometimes, when the weather is bad, the food becomes the entertainment. “We are down the rabbithole of snow. When the weather gets bad, people start to climb the walls.”
As if that isn’t pressure enough, getting quality ingredients flown into the backcountry isn’t the easiest task either. “Getting stuff to the lodge is very expensive,” says Brendan. “There are so many steps to get it on the plate.”
When Chef Brendan isn’t cooking he enjoys heli skiing, Nordic skiing and interacting with guests. He knows the returning guests and their special orders and he loves getting to know all the quality people that come to TML for their epic week of skiing or fishing.
